There is something rather addictive about chocolate porridge so you may find yourself wanting to make it again and again. In that case, make life easier for yourself by throwing a big jar of bulk mix together.

Yields: Serves 5 - 6
4 cups rolled oats
1 cup shredded coconut
¾ cup cocoa/cacao powder
2 teaspoons cinnamon
Large pinch of sea salt (optional)
1Place all ingredients in a screw-top jar and shake together.
2Each time you want to make a single serve of porridge, add 2/3 of a cup of the mixture to 1 cup of milk. Add vanilla extract if desired, one or two pieces of finely-chopped fruit, and cook over a moderate heat for 5 - 10 minutes, mashing the fruit with a potato masher as it cooks.
