1 large or 2 small zucchini or scallopini (preferably different colours), grated
1 carrot, grated
1 cup red grapes, halved
Large handfuls of herbs (mint and coriander are delicious), roughly chopped
2 tablespoons oil (flaxseed/olive)
1/2 a lemon, zested and juiced
1 clove garlic, crushed
1 tablespoon poppy seeds
1 teaspoon Spanish smoked paprika
Sea salt and black pepper, to taste
1/4 cup pinenuts or sunflower seeds (to garnish)
Directions
1Place the vegetables, grapes and herbs in a salad bowl. In a screw top jar, shake oil. lemon juice and zest, garlic, poppy seeds, smoked paprika and seasoning until combined. Mix dressing though salad ingredients and garnish with pinenuts/sunflower seeds. That’s it – couldn’t be easier!
