Lucky, Lucky, Lucky….and Date Caramel Sauce

I consider myself pretty lucky, in a number of ways. Here are three of them:

1. At my high school, in the 1980s (when, incidentally, Kylie Minogue sang about the title of this post – besides the date caramel sauce bit), there was an elective class on learning to juggle. I took it, and practised a lot, and as a result I can juggle. This is a surprisingly useful skill to have – give me a bag of mandarins and a bunch of grumpy kids, and I guarantee that in about five minutes they’ll be cranky no more.

2. Something that some of you know about me – and many of you don’t – is that I spend about fifteen minutes a week entering competitions. It’s amazing how much stuff there is out there to be won, and if you enter, you just might hit the jackpot! (This reminds me: I have a brand new, never-out-of-the box, foot-operated, under-sink compost-bin operating system. I’m sure one of you is in desperate need of this. If it’s you, get in touch!!)

3. Once a month, I get to send recipes and photos of some of my favourite dishes to the Otago Daily Times, and they publish them in their new weekend features magazine – The Weekend Mix. I get to tell people all over Otago what I’m eating – it’s such a privilege and I love it!

Last weekend I had two recipes published – one for Five-Minute Cucumber Salad (which the more astute of you will have already spotted on this site), and the other was for Date Caramel Sauce. I love this sauce – it is awesome served with fruit, or in a parfait, or eaten off the spoon…the possibilities are endless. Check it out here, and the printable recipe is here.

I also know I’m lucky to have a lovely family – which is why I’m taking a digital detox this long weekend, so I can fully enjoy spending time with them. But I’d love to know – what makes you feel lucky?
