Blast from the past – ‘Grate stuff’ salad

Hi there! I hope you’ve had a wonderful weekend.

I’ve felt like such a jet-setter recently – having not stepped foot inside an airport for months, suddenly I was off to Auckland, home again, and then off to Christchurch within the space of a week. Lucky me!

I got to hang out with family and friends, and went to some amazing events in both locations. First up were the TEDx talks in Auckland (I hope they’ll eventually be available on YouTube and when they are, I’ll point you in the direction of my favorites). So many clever clever people are doing amazing things in NZ!

Then on Saturday I went to a Blogging Concentrated workshop – which completely blew my mind. The presenters, Dan Morris and Rachel Martin, really know their stuff – they gave us so much useful information, not just about blogging, but also how to run a successful online business. I went away with pages and pages of tips and ideas, and had such a great time in the company of other people who, like me, are figuring out how to turn their passions into businesses, and share their talents with the world. Apparently New Zealand is such an awesome place to run these events that they’re coming back later this year – if you have a website or a blog, I strongly encourage you to go! I’ll let you know when I hear more.

All of this has meant that there’s been no time for coming up with fantastic recipes, so it’s time for a blast from the past week. This recipe for what I call the ‘grate stuff’ salad is so fast and easy; it’s perfect any time of year. There are still a few zucchini lurking in stores in NZ (but if you can’t find zucchini, grate some cucumber instead – just be sure to blot with paper towels to soak up excess moisture). This salad is one of the ways I like to keep a little bit of fresh, raw food on our plates when we’re feeling the need to eat more comforting food. With this on the side, you can’t go wrong.
