I don’t know why, but I’d far prefer to make a salad by grating the ingredients than chopping them. I can’t explain it – it’s no less work! I make seasonal variations of this one all the time and had never thought of adding it to the website, until last weekend’s workshop when someone asked for more recipes that don’t require fancy-pants equipment. This definitely fits the bill – all you need is a chopping board, knife and grater or microplane (oh hang on – that’s in the fancy-pants category). Here’s the late summer/early autumn version.
‘Grate Stuff’ Salad

1 large or 2 small zucchini or scallopini (preferably different colours), grated
1 carrot, grated
1 cup red grapes, halved
Large handfuls of herbs (mint and coriander are delicious), roughly chopped
2 tablespoons oil (flaxseed/olive)
1/2 a lemon, zested and juiced
1 clove garlic, crushed
1 tablespoon poppy seeds
1 teaspoon Spanish smoked paprika
Sea salt and black pepper, to taste
1/4 cup pinenuts or sunflower seeds (to garnish)

Place the vegetables, grapes and herbs in a salad bowl. In a screw top jar, shake oil. lemon juice and zest, garlic, poppy seeds, smoked paprika and seasoning until combined. Mix dressing though salad ingredients and garnish with pinenuts/sunflower seeds.
That’s it – couldn’t be easier!

The “grate stuff” salad looks great! Please tell us the secret of how NOT grate one’s fingers in the process. I’m so clumsy that I often cut my fingers!
As for your upcoming book, I definitely think it should be both an “real” book and an e-book. That way you can reach a wide range of readers.

Thanks for your reply Nancy! I’m afraid you’re asking the wrong person if you want to know how to NOT cut yourself when grating. I had the dubious honour of breaking out the first aid kit at raw chef training before anyone else (I didn’t even make it to morning tea on day 1 of 3 days, without a plaster). All I can say is that, despite the fact that you quite like kitchen paraphernalia, you should never ever ever buy yourself a mandolin!
And the good news, Nancy, is that you won! Lucky you! I’ll let you know when it’s ready.
Oh definitely a *proper* book, I like cooking from an actual page and I like being able to leaf through a colourful book looking for something to make. Anyway, it’s not the same when an ebook falls down the side of your bed, is it?!
Favourite recipes so far…the super seed mix is a great one, and I like the look of this one here, the grate salad, and the beetroot salad you posted a while ago too. Actually I would love a big salad section, because I sometimes get a little sick of my own salad ideas.
Also those truffles look beautiful, they’re on my “try soon” list!

Definitely the Marinated Mushrooms as so simple but yum
Bliss balls are always a good go to recipe .
