I am so honoured to have been approached by the Otago Daily Times and invited to start contributing to their new weekend features magazine – The Mix. The first edition came out Saturday 27 September and it’s a great combination of new columns and features, as well as some of the old favourites from the weekend ODT. (Plus Lisa Scott – who used to write a weekday column. She has me in stitches at times so it’s great to have longer to savour the hysteria.) So far there’s been quite a focus on health and wellbeing – I’m liking it a lot. It certainly makes the Saturday ODT last all weekend in my house (and I’m not just saying this because I’m going to be in it every now and then).
One of my first recipes was a super-easy one for cauliflower ‘rice’ salad – it’s a goodie and you can see it here. You can use it in place of rice or couscous, and you can mix it up with whatever nuts, dried fruit, herbs and spices that you feel inclined to add. Even better – it’s another helping of veges on your plate, and it’s faster to cook than rice (not faster than couscous – it’s pretty hard to be faster than that). Enjoy!
